Islay Single Malt Scotch Whisky
Our 100% Islay series is Islay’s only Single Farm Single Malt Scotch Whisky. It represents the revival of traditional farm distilling; we grow our own barley and then malt, distill, mature, and bottle each bottle of our 100% Islay series on-site.
The 100% Islay 14th Edition is distilled from our barley harvested in 2013 and 2014 and then matured in select bourbon and oloroso sherry casks for at least nine years.
TASTE Creamy caramelized sugars, vanilla, lemon, pineapple sweetness, fresh ginger, and oak smoke.
FINISH Oily and textured with rich sherry notes and lingering peat smoke.
About Kilchoman Distillery Kilchoman is Scotland’s only farm distillery, located at Rockside Farm on the northwest of Islay. Here, the distillery grows its own grain by Machir Bay and is the only distillery on the island that both grows and malts Islay grain for its whiskies. Kilchoman was founded in 2005 and sold its first whisky in 2009. It is a classic Islay whisky, with distinct, elegant hints of the peat smoke that Islay is beloved for. What makes Kilchoman unique, however, is the slight hint of citrus in its whiskies, which brings a touch of freshness to each dram. 20% of the malt is from its own barley, and they exclusively produce Single Malts – not whisky for blends. Generally, these whiskies can and should be enjoyed young and exhibit a fresh and lively character with a salty note. This is due to peat that has been saturated with saltwater for centuries.
The whisky ferments for a minimum of four days, or 50 hours. At this point, most distilleries stop fermentation, but Kilchoman lets it continue longer, allowing for secondary fermentation and additional esters to develop. They use small stills and double-distill.
Exclusive and Popular Whiskies For the distillery’s two most popular whiskies, Machir Bay and Sanaig, a combination of bourbon and sherry casks is used. While most of the casks for Machir Bay are bourbon casks, the majority of casks for Sanaig are sherry casks. Both whiskies are bottled at 46%, with no caramel coloring added and no chill filtration.
