The Producer:
Paolo Marolo is the founder of this remarkable distillery located on the outskirts of Alba, between the renowned wine regions of Barolo and Barbaresco in Piedmont. Marolo enjoys a strong reputation and is highly esteemed by connoisseurs and restaurateurs in Italy, Europe, and the USA.

The distillery was established in 1977 and employs the artisanal method discontinuo a bagnomaria (batch distillation with a water bath). This technique involves mixing grape pomace with water and heating it indirectly, ensuring the raw materials are treated with maximum care.
