OMAR means “amber” in Gaelic, and the name reflects the elegant amber color of our single malt whisky. The place where Nantou Distillery is located has a pleasant climate and source of clean and unpolluted water, which is suitable for whiskey production and maturation. That’s why we built the distillery here. The whiskey is non-chill filtered and bottled without added caramel.
For their Sherry Cask Finished Single Malt Whisky, the distillery went to Spain in search of partners in 2015. Finally, Garvey Sherry Winery in Jerez, which was built in 1780,
kindly provided the Oloroso sherry casks that have been used for the entire Solera system. In addition, Ximenez Spinola in Jerez, built in 1729, also kindly provided us with entire Solera System PX sherry casks.
The whiskey is aged using the Solera System: a process for maturing sherry wine by fractionally blending wine from different ages. One-third of the oldest spirit from the lower layers of the system is bottled, then transfers another third of spirit from secondary-layer casks to bottom-layer casks. The youngest spirit is poured into the upper casks by this analogy based on each maturation period.
Omar Sherry Cask Finished Single Malt Whiskey Tasting notes:
Colour: Sunset Brass
Aroma: Longan honey, ripe mango and banana, raisins, plum preserves with a woody scent followed by aromas of fresh citrus and apple
Taste: Sweet with rich fruit
Finish: Long, dry fruit with hints of orange cake
Nantou is Taiwan’s second largest province and in Nantouhsie is the distillery that actually makes wine and is called Nantou Winery.
During 2008, spirits began to be distilled to become whiskey. In the beginning, a nearby brewery was left to take care of the entire process until the mash was ready to be distilled. But during 2010, German mäsktunnor and washbacks were installed in order to make your own mäsk.
The size of the washbacks is 15,000 litres, and the fermentation takes 60-72 hours, and only malted grain is used.
Ægare is TTL (Taiwan Tobacco & Liquor Corporation), which is owned by the state and has sprung from the monopoly that ended in 2002.
