David Finlayson GS Cabernet Sauvignon 2021 is a flagship South African red that showcases the full potential of Stellenbosch terroir and precision winemaking. Sourced from low-yielding, old-vine Cabernet Sauvignon grown on granite and gravel soils at the foothills of the Simonsberg Mountain, the wine offers both power and elegance.
After hand-harvesting and meticulous grape selection, fermentation takes place with extended skin contact to extract depth and structure. The wine is then aged for up to 24 months in new French oak barrels, contributing to its refined tannins and layered complexity.
The bouquet is intense and expressive, with notes of blackcurrant, blackberry, plum, cedarwood, dark chocolate, mocha, vanilla, and hints of mint and dried herbs. On the palate, it is full-bodied and concentrated with firm, ripe tannins, a vibrant acidity, and a long, balanced finish. This is a wine that drinks beautifully now but will age gracefully for 10–15 years.
