Indian Wells Cabernet Sauvignon is typically New World style – lots of slightly jam-sweet fruit, albeit firm, juicy dark fruit and a nice, slightly fat vanilla touch. But it’s Cabernet Sauvignon, so the wine is still upright and supple, with a, for Cabernet, so typical complexity. A little Syrah added to create structure. 15 months on both American and French casks gives this great, beautiful red wine lots of character and a high alcohol content. Wine that can stand the distance to scratchy cases such as mustard, paprika and nutmeg when used for both red steaks, duck, lamb and cheese, but also sauces with dark chocolate, will go well with Indian Wells Cabernet Sauvignon.

Vinification:
Barrel aged for 22 months. Of which 39% in new US and
French oak barrels.
Tasting notes:
Lots of sweet, ripe fruit, a delicious vanilla touch from
the barrel storage. Very useful and well-cooked New World
style Cabernet Sauvignon.
Recommended for: Lamb, Dark Poultry, Calf, Beef
