The Maraschino characteristic flavor comes from Marasca cherries, and the crushed cherries give an almond-like flavor to Maraschino liqueur. Honey is also part of the old recipe. The distillate is allowed to mature for two years in Finnish Ashwood casks, as this wood does not impart its color to the liqueur, even after years of aging, and is then diluted and sweetened.
