Champagne Michel Vallez – Elegance and Freshness
Champagne Michel Vallez was created by Michel Dervin, who realized his dream of crafting his own cuvées in 1983. The vineyard is located in Cuchery, in the heart of the Marne Valley, covering 7.8 hectares of vineyards where Meunier and Pinot Noir form the house’s signature cuvées: Blanc de Noirs, Rosé, and Millésime.
The grapes are carefully hand-harvested, and fermentation takes place in temperature-controlled stainless steel tanks to ensure finesse and preserve the grapes’ natural acidity. The champagne is aged for 24-36 months for optimal complexity and freshness.

About Champagne Michel Vallez
Champagne Michel Vallez was founded by Michel Dervin, a native of Champagne who, from an early age, dreamed of becoming a winemaker and producing his own cuvées. In 1983, his dream came true when he created Champagne Michel Dervin. He started with a small vineyard, which he expanded over the years into an estate covering 7.8 hectares in the village of Cuchery, located on the edge of a small tributary of the Marne with breathtaking views of the hills.
The cuvées are the fruit of the terroir in the heart of the Marne Valley, where the dominant grape variety is Meunier. The house’s Blanc de Noirs, Rosé, and Millésime derive their unique character from a blend exclusively composed of black grapes with white juice—Pinot Noir and Meunier.
The grapes are hand-harvested and gently pressed. Fermentation and stabilization occur in stainless steel tanks with temperature control to ensure the final champagne retains its finesse and aromatic complexity. Malolactic fermentation is not performed to best preserve the natural acidity of the grapes. The cellar maintains a constant temperature, protected from light. The champagnes are aged longer than regulations require (around 36 months).
Michel Vallez is synonymous with lively, fresh, and honest champagne.

Mad & Monopolet
“I love champagne, and when I see ‘Blanc de Noirs,’ I get even more excited because I love Pinot Noir, which this is made from. The aroma presents citrus, green apples, grapefruit, nuts, and a slight hint of dried fruit. On the palate, it is fresh, lively, full of energy and tart fruits, with an underlying creamy depth. This could be the champagne you pop at 6 PM on New Year’s Eve with salty snacks.”

“AMAZING CHAMPAGNE FOR THE PRICE”
“Wonderful champagne and one of the best champagne deals I’ve come across in a long time. It exudes grandma’s apple trifle, citrus, yellow plums, rye bread, roasted nuts, and a touch of chalk. Sleek and pure on the palate, offering a delicious combination of fallen apples, a hint of red berries, and a tongue-tingling acidity. Delightfully dry with minimal dosage. Incredible champagne for the price…”

“SCENT OF CELEBRATION AND HAPPY DAYS”
“The aroma reveals citrus, ripe apples, butter, brioche, and a hint of almonds—a very classic champagne scent of celebration and joyful moments. The taste again features citrus and ripe apples, apricots, along with a creamy and elegant mouthfeel. A medium acidity creates freshness and liveliness in the bubbles. A classic and highly well-balanced dry champagne, but with a straightforward and pleasant fruit sweetness thanks to its 10 g/L dosage. A fantastic bottle of bubbles for the New Year’s toast and likely a crowd-pleaser due to its accessible sweetness and freshness.”

“ELEGANT CHAMPAGNE”
“Champagne made from dark-skinned grapes, Pinot Noir and Meunier, and you can tell right away. A beautiful golden color in the glass, with aromas of pear, freshly baked rolls, and salted caramel. On the palate, it has good body and flavors of fallen, tart Danish apples, with cool aromatics lingering in the mouth. A voluminous yet elegant champagne. It’s still possible to buy high-quality champagne without consulting your bank advisor first.”
