The French term “Blanc de Noirs” means something like “white of blacks”. It is a reference to the grapes used in Champagne. This type of champagne is light (blanc), but is typically made from the blue grape Pinot Noir. When the champagne is still light, it is because the grape skins are quickly removed during vinification. It is the grape skins that contain dyes. The content of the grapes is white. So you get a light champagne from dark grapes: Blanc de Noirs.
Fresh champagne with abundant character and fruity in its expression with an elegant roundness and pleasant bubbles. The aroma offers exotic fruit, hints of orange and grapefruit. Complex taste impression, where the balance between sugar and acid is spot on.
Aged 24-36 months in the cellar. Dosage (sugar): 44g/L.
The grapes are harvested by hand and pressed slowly. Fermentation and stabilization of the wine takes place in stainless steel vats with temperature regulation to ensure the finesse and aromatic complexity of the finished champagne. Malolactic fermentation is not carried out in order to best preserve the natural acidity of the grapes. The cellar has a constant temperature, which is protected from light. The champagnes age longer than the regulations prescribe (approx. 36 months).
