Half-Dry Spanish Sparkling Wine

This cava is grown, vinified and stored at the ‘cava capital’ of Sant Sadurni d’Anoia, near Barcelona, ​​which houses the country’s best terroir for this traditional specialty.

The grapes, which come from the high fields of González Byass’ Finca Can Petit, are the classics of the area with macabeo, parellada and xarel.lo with the majority of the former in the blend.
After finishing the second fermentation in the bottle, the wines are stored approx. 12 months before release. This storage time is necessary for aromatic development and complexity.

Demi-sec means in ‘champagne language’ half-sweet, although most people will probably find that the wine is somewhere between half-dry and half-sweet.

The scent has elements of citrus and a little red fruit with floral undertones. The taste has a light sweetness with a nice fruitiness that is kept in check by a fresh acid. The bubbles have the elegance that is classic of the ‘traditional method’.

Dom Potier Cava Demi-Sec is an excellent ‘toast wine’ that can also be used for a wide range of dishes, where you want to avoid the more stringent style of a cava brut.
