Wine made from Fiano grapes, a white grape variety subjected to red vinification at a controlled temperature with maceration time of approximately 13 days.

Visually, it has an amber color with the presence of orange tones; on the nose we find herbaceous notes and fruity like apricot, hints of honey and balsamic background. In the mouth you can perceive a discreet tannin intensity, thanks to the duration of the maceration phase, soft tannin.

Authentic and macerated wine coarsely filtered.

Cortex, an amber wine with orange reflection. It is obtained with a white grape variety that undergoes a vinification process similar to red wine, with a maceration time for skin contact of 13 days. This method allows for an extraction of tannins and color, adding complexity and an amber hue to the wine.

Schola Sarmenti is one of the wineries in the very hot and sunny Puglia in southernmost Italy that knows how to vinify the wines so that they are fresh and with a nice fruity taste. Founded in 1999. Produces great wines with a touch of the terroir of the Salento area. Some of the vineyards are very close to the sea. Vines that are up to 80 years old. Schola Sarmenti aims to preserve and use the old Alberello Pugliese cultivation system with free-standing canes that support themselves as shrubs or small trees. This form is often used in very hot regions, as the plant contributes its own shade. Gives low yield and high quality from each vine.
