The wine is a blend of Colombard and Sauvignon Blanc—two aromatically similar grape varieties, both with fresh acidity, intense floral aromas, and minimal body. The style is carefully preserved through cold fermentation in stainless steel tanks. Afterwards, the wine is also aged in steel tanks on its fine lees until blending and bottling.
Lemon and grapefruit, freshly cut grass, elderflower, blackcurrant leaf, and tropical notes leaning toward passion fruit form the aromatic core of this wine. It is dry without being sharp, and simply has an enviably high drinkability.
Many enjoy this wine as their go-to aperitif, but it’s also highly versatile with food—perfect with sushi, smoked salmon, a green salad with fresh goat cheese, shrimp sandwiches, or lighter fish dishes.
Sainte Gabelle Colombard – Sauvignon Blanc is a pleasure to drink, while still retaining its youthful freshness.
