A glorious 12-year-old palo cortado from the top fields of Macharnudo and Carrascal, whose lime-saturated ‘albariza’ soil fits perfectly with the palomino grape, which is the raw material behind the wine.
Only sherry connoisseurs will be familiar with this type, which is aromatically located somewhere between amontillado and oloroso (seco) – although almost the latter, but palo cortado also has a floral touch from the biological storage, which lasts around a year. In other words, it is a sherry that has started life as a fino and through the yeast layer’s disappearance and extended storage over time exhibits oxidative properties.
González Byass needs no further presentation, while the palo cortado ‘Leonor’ is a new phenomenon. Previously, the wine went to further storage to end life as the older and markedly more expensive Apostoles VORS. However, part of this basic wine is now bottled as an independent wine, which with its combination of long aging and reasonable pricing exhibits a unique relationship between price and quality.

The aroma and taste are very intense with rich rancio notes of pickled orange peel, free acid, lacquer, nuts, yeast, toasted dish and golden fruit. The taste has fatness and fullness that is balanced by dryness and a liberating freshness. The aftertaste has such an excellent length that one can so appropriately spend time wondering how it is possible to cram so much complexity and intensity into an affordable wine. Enjoyed for example for good air-dried ham and / or for a delicious, well-aged sheep cheese such as Manchego. Also try it for salted nuts and almonds, for smoked mackerel or an intense consommé.

Enjoy slightly cooled by a good white wine glass.
