Abuelo XV Oloroso is another good commandment that Abuelo has started producing the world’s best Rome. Abuelo XV Oloroso is one of 3 drainages in XV Finish Collection. All 3 Rome is 15 years old and has got a storage (finish), on a dish that has previously been used for storing other spirits.

The name of the 3 ROMs not only reflects the character from the dish, but also the place has inspired the final design of the Romm.

Napoleon is Cognac from France, Oloroso is Sherry from Spain and Tawny is Port Wine from Portugal.

A rafted, elegant and very real “Single Estate Rome” – The sugar cans are grown on their own fields, the room is distilled on own column boilers and the room stored on ex Bourbon dishes in own warehouses!

Background history

The room is made by Varela Hermanos in Panama. Their story stretches back to 1908, when Don José Varela Blanco, a young Spanish immigrant, set up San Isidro sugar mill in the city of Pesé. The first sugar mill in the then newly created Panama Republic.

The town of Pesé, who itself was created in the middle of the eighteenth century, is in a fertile valley in the middle of Panama. The main profession in this valley is now the cultivation of sugar cane, which employs many local farmers.

The moderate precipitation, the cold nights and humid days play all a role in the development and maturation of the ROM. The greater difference in the temperature of the very hot days and the cold nights, the faster the ripe nomen and the more flavoring and fragrances develop there. So the Abuelo Rome Fabricity is not randomly in this “butter hole”.
