The aromas of fleshy fruit stand out: peach, apricot and ripe plum, but not yet raisin. When the glass is turned, the pear and the green apple are awakened with no more than a slight hint of bitter almonds from French oak, balancing the effervescent abundance of its fruity manifestation.
100% Pedro Ximenez
Ximenez-Spinola Winery was founded in 1729 by Phelipe Zarzana Spinola and was originally dedicated to producing only Pedro Ximenez. At that time, the vineyard bottled the wine under the name Zarzana Spinola, but as this name was somewhat of a challenge, not to mention an impossibility to pronounce in English, a large English customer demanded that this be changed to Ximenez – Spinola, who then had Done. Today, only Pedro Ximenez wines are produced exclusively, and even though you are still extremely traditional in your winemaking, you are still trying to experiment with the grape type so that you do not just make sherry. An example is late harvest, which is the only one of its kind in the district.
