Danish Organic Single Malt Whisky

Isle of Fionia Peated is our smoky take on a lovely, Danish, organic whisky. Peated is made with 100% peat-smoked malt (35 ppm) and has first matured in 1st-fill ex-bourbon casks. After this, the dishes are poured onto STR dishes. The result is a medium-smoked whiskey with a lovely sweetness, a well-balanced complexity and a hint of iodine, licorice and toffee.

Isle of Fionia Peated is bottled with an alcohol strength of 48%. It is a little higher than our other variants, but we think it is the best.

SMOKED WHISKEY FINISHED IN STR WINE BARRELS
Isle of Fionia Peated is made from medium smoked organic malt, which gives it a pleasant but distinct smoky taste. It is first matured in former Jack Daniels Bourbon casks and then partially finished in white oak STR wine casks. Finally, we bottled it at 58.1% alcohol strength; the strength that we think suits Ardor Peated best. At the same time, the whiskey here is a good example of why smoked whiskey tastes particularly good while it is still young. This means that the smoke flavor appears clearer and stronger.

SHAVED, TOASTED AND RE-CHARRED
STR stands for Shaved, Toasted and Re-charred. STR works in such a way that you first scrape 5mm of the inside of the stem of the wine barrel (Shaved). The inside of the dish is then toasted and re-charred. This whole process has made the taste of our whiskey extra special. The STR casks we have used have made the whiskey rounder, given it greater complexity and extra color – compared to the whiskey that has only been aged in bourbon casks. The two cask types together have meant that we have been able to make a complex, characterful and harmonious single malt whisky.
