Bodegas Ximenez-Spinola Quality Brandy – Spain

Very limited edition from Ximenez Spinola – only 3000 bottles. 100% Pedro Ximenez grapes are used here, and Ximenez Spinola is the only producer that does so. The drying process takes several days until the grapes have their ideal sugar content. A sweet wine is pressed from them, which becomes sherry. It is on the sweet side, but also with a certain dryness and with many subtle nuances, a slight bitterness and fruity notes.

What is quite exceptional about Spinola Brandy Criaderas is the use of chestnut casks during aging. Until the Spanish Civil War in 1939, there was a tradition of using chestnut casks in Spain, but when a large part of the forest areas were felled during the war, the coopers subsequently increasingly switched to using American oak, and eventually completely stopped using chestnut tree. The casks at Bodegas Spinola are all at least 70 years old and therefore release only an extremely limited amount of tannin, which helps to give the brandy a rounder and softer taste.

About Bodegas Ximénez-Spínola
It was Phelipe Zarzana Spínola who in 1729 founded Zarzana-Spínola, which today is known as Ximénez-Spínola, with the aim of exclusively cultivating Pedro Ximénez. To this day, only the Pedro-Ximénez grape is produced at Ximénez-Spínola, and the wine is aged in 500-liter oak barrels, also known as Jerez export barrels. However, Ximénez-Spínola also implements new measures, e.g. they are the only ones in their district to try a Late Harvest in addition to the traditional sherry.
