This is organic quality cava from the small producer, Castell de Vilarnau, created in 1948. It is the first winery in Penedès to receive the WINERY FOR cl.IMATE PROTECTION award.
Based on 15 hectares of Sant Sadurní de Anoia’s highest fields and a new winery, Finca Can Petit, with the pricelessly beautiful Montserrat mountains as a backdrop, Damià Deàs Gual creates an impressive range of cavas at astonishingly down-to-earth prices.
This brut reserva is second-fermented in a particularly practical magnum bottle (150 cl), so that you can economize a little with your efforts when you have to open many bottles, or you need to make a little extra noise with the visuals.
The grapes are the classic cava grapes, namely macabeo (50%), parellada (35%) and xarel.lo (15%), which after vinification are stored for min. 18 months before release; an expensive measure compared to the minimum requirement of 9 months for the basic DO requirement, but the patient is rewarded with extra complexity, finer bubbles and the reserva designation.
Aroma and taste are characterized by the two main elements, namely the Macabeo grape, which provides the elegant fruitiness with its aroma of green apples, while vinification and aging aromas are the other mainstay of the wine. In both aroma and taste, the fleshy ripeness of the grapes is felt, which is balanced by a good acid profile and a constant flow of fine bubbles.
The same maturity also means that the wine is not perceived as dusty, but simply pleasantly dry! Vilarnau Cava Brut is, via a long aging, ready to drink upon release, where it is not only self-described as the obvious choice for a welcome drink, but is actually also the most widely applicable food accompaniment imaginable. Try it not only with fish and shellfish, but also as a cheese wine, with creamy soups, with a multitude of dishes with pork and poultry and not least as the perfect partner for tapas.
Enjoyed in not too small glasses at a temperature of 7-10°.
