The grapes for Slow Press Chardonnay come from Monterey County, where the days are warm and the nights cool, the fog from the Pacific Ocean channeled into the fields from the coast. This climate is perfect for the Chardonnay grapes, which sign off with good fruit flavors and a lovely fresh acidity.
The grapes undergo a careful pressing to develop the rich aromas. The slow fermentation enhances the natural fruit. The wine undergoes a maturation in American oak for nine months.
