In Jerez de la Frontera, where sherry is made, the word “pagos” means vineyards, and as you’ve probably guessed, this Jamaican rum is aged in sherry casks. It is not just a matter of a finish; the rum is aged exclusively in sherry casks from Lustau that have contained oloroso or PX sherry – and this is the first time we have seen it from Hampden Estate. The alcohol percentage is a very well-chosen 52, and of course there is no added sugar or colour.
Colour: Dark amber.
Aroma: Dark chocolate, apricot, mango and passion fruit.
Tasting notes: Balanced, long and complex, again with notes of chocolate and cocoa, some citrus, stone fruit and warm spices.
