In 1961, Jørgen Ketil Asmund, at De danske Spritfabriker in Roskilde, began working with a Danish bitter. It was a time when many Danes started traveling to southern Europe for sunny holidays. In the evening at the bar you discovered the bitter drinks.
Over the course of three years, Asmund tested more than 300 ingredients and more than 600 combinations together with working groups and extensive taste panels. It is said that his painstaking work took its toll on the palate. For a long time he could neither eat nor drink, but lived on boiled cod and water. In 1964, Asmund had reached his goal and locked down the recipe for a “soft and at the same time bitter schnapps”.
Gammel Dansk is usually mixed with 29 herbs and spices. The exact recipes are a well-kept secret. However, it is said that, among other things, rowan berries, anise, ginger and wormwood contribute to the unique taste. The original is a style icon in its class.
