The Dufour family has been cultivating vines and making wine at Château Simon since 1814. Carrying know-how passed down from generation to generation and rich in a pioneering spirit, Château Simon today extends over 33 hectares in the Barsac – Sauternes, Graves and Bordeaux appellations. Sauternes wines therefore benefit from a unique microclimate, characterized by a temperature differential between the warm waters of the Garonne and the very cold flows of the Ciron. In autumn, morning fogs catalyze the development of Botrytis Cinerea, noble rot, the Holy Grail of Sauternes wines. Manual harvest with 4 to 5 successive very careful sortings. Only over-ripe (botrytized) bunches are selected, and are delicately pressed overnight. After cold settling, the must ferments in thermo-regulated stainless steel vats. The best lots are selected and aged in oak barrels for 18 months.

With a magnificent golden color, this wine develops a very intense nose with a subtle bouquet of exotic fruits and citrus fruits. The attack is round and fruity with an ample, rich and fresh evolution. The finish is delicious with spicy notes and an elegant fresh, slightly minty touch.
