Manufacturing
Casa Giona Amarone is made from the classic grapes Corvina, Corvinone and Rondinella.
The grapes are harvested by hand at high maturity at the beginning of October, and the best bunches are selected for Casa Giona Amarone. The grapes are then dehydrated under controlled conditions before pressing. This is done by leaving them to dry in the winery’s cellars for 3-4 months, which means that the weight of the grapes is reduced by approx. 30%. This concentrates the sugar content and the flavor components in the must, resulting in a powerful wine with a slightly sweet touch and a super flavor concentration.
In January and February, the de-stemmed grapes are carefully crushed. The must ferments at controlled temperatures of 18-21°C for approx. 30 days.
After this, 80% of the wine matures in oak for 18 months. 2/3 of this in used American and French oak barrels and the last 1/3 in large barrels. The last 20% of the wine matures in steel tanks. Finally, the Amarone is bottled, where it rests before being released for sale.
About the manufacturer
Casa Giona makes super delicious classic wines in the Veneto region of northern Italy. In the lush landscape east of Lake Garda we find Valpolicella, where the hilly landscape ensures perfect sun exposure for the vines. The soil, which consists of limestone, makes the area particularly suitable as a growing place for the Valpolicella district’s classic grape varieties.
