Pago de los Capellanes Reserva 2022 75 cl.

Ribera del Duero – Spain

Pago de los Capellanes Reserva is a serious, classic Ribera del Duero Reserva with the house signature: deep fruit, precise structure and an elegant freshness that keeps the wine powerful yet balanced. It’s made from Tempranillo (Tinto Fino) from carefully selected parcels where low yields and fully ripe fruit deliver intensity—without tipping into heaviness.

Nose

The aroma opens with dark cherries, blackberries and plum, followed by subtle floral hints and a clear, well-integrated oak profile. As the wine gets air, you’ll often find sweet spice, vanilla, cedar, gentle toast, and a discreet touch of cocoa/liquorice.

Palate & style

On the palate it’s full-bodied and concentrated, yet polished with an almost velvety texture. The fruit sits firmly in the dark spectrum, the tannins are ripe and firm, and the acidity is bright and supportive, giving lift and length. The finish is long, showing spice, dark fruit and a dry, elegant edge.

Winemaking & ageing

The Reserva style relies on strict grape selection, careful extraction and maturation that brings all elements together. Fermentation is typically managed to preserve the purity of fruit, and ageing in oak (often French) adds complexity and structure. The result is a wine where the oak supports the fruit rather than dominating it.

Serving

Serve at 16–18°C. If the wine is young, give it air in a decanter for 1–2 hours (or open the bottle well in advance) to highlight aromatics and soften the structure.

Food pairing

This is a wine that loves depth and flavour:

  • Beef (grill, steak, rib, short ribs)

  • Lamb (rosemary, garlic, braised shank)

  • Game (venison, wild boar, duck)

  • Slow-cooked dishes with mushrooms, smoke, pepper and reduced sauces

  • Aged cheeses and robust charcuterie

About the producer: Pago de los Capellanes

Pago de los Capellanes is a highly regarded family-owned winery from Pedrosa de Duero, in the heart of Ribera del Duero. The estate is known for a no-compromise focus on quality: emphasis on estate vineyards/selected parcels, low yields, and a style where Tempranillo expresses both depth of fruit and a clear sense of place, supported by freshness.

Their wines are often described as modern in precision yet classic in balance: concentration without overripeness, oak that frames rather than overwhelms, and a structure that works both for immediate enjoyment and for cellaring. The Reserva is frequently one of the most “complete” wines in the range—bringing depth, complexity and a beautifully rounded texture into a harmonious whole.
