A charming white wine where a touch of sweetness helps create perfect balance. The bouquet is wonderfully open, with notes of tropical fruit, apricot, pear and honey. The palate is very juicy and easy to drink, showing a lovely interplay of yellow and green fruit, lifted by subtle hints of fennel and anise.
This is Benoît Gautier’s calling card: 100% Chenin Blanc, hand-harvested from the estate’s best parcels in Vouvray. Grass is planted between the vineyard rows to promote natural balance and keep yields naturally low. Fermentation starts spontaneously after the hand harvest, using only the natural yeasts found on the grape skins. The wine then rests sur lie(on its fine lees) for four months in stainless steel to build complexity in the finished wine.
