Mosgaard Palo Cortado #1 is a long-awaited novelty that took its first steps towards the finished product several years ago. There we had the casks built from American white oak, got them medium toasted, and aged them with Palo Cortado sherry.

It was not an ordinary Palo Cortado sherry that came to the casks, but a sherry that Gitte and Jes Mosgaard themselves have blended in Spain. The sherry has been in the casks for 1.5 years and penetrated as deeply into the wood as possible – thus maturing the cask to be able to make Palo Cortado whisky. When the casks were mature, the sherry went on, and we got the casks which were filled with New Spirit.

The Palo Cortado whiskey is now finally matured and ready for bottling. It has become an elegant Palo Cortado aged whisky, with intense flavor notes of malt, caramel, grapes, marzipan, lemongrass, bitter oranges, plums and green apples.

Mosgaard Palo Cortado whiskey is bottled at a strength of 53%, which gives it a pleasant fullness, and precisely at that alcohol strength, there is a balance of the spicy malt and the green citrus notes.

Palo Cortado is an exciting sherry, which today typically starts its production as an Amontillado that is made from the first part of the juice when the grapes are pressed, which gives the fine nose with the typical orange citrus notes. During the end of fermentation, a stronger sherry with a higher alcohol percentage is added, which protects against too much oxidation during storage. The result for Palo Cortado is a sherry with the nose from Amontillado and the body from Oloroso.

Dark, intense and spicy notes in the fragrance. Prunes, mocha, figs, black pepper, citrus and vanilla in the taste. Soft and elegant, but still with lots of intensity. A complete and beautiful dram with plenty of depth.

About Mosgaard Whisky
In the beautiful South Fyn, Jes and Gitte Mosgaard founded the distillery Mosgaard ved Oure in 2015, and today they make possibly Denmark’s best gin and whisky, entirely based on organic ingredients and favored with countless awards during the still short life of the distillery.

What the distillery lacks in size, the products make up for in taste, and production is based on solid, honest craftsmanship with inspiration sourced in Scotland. The distillery itself was designed by Jes and Gitte themselves and handcrafted in Portugal, where the old craft is done in the same way as it has been done for generations. Time is of the essence at Mosgaard. The production takes place with organic Danish barley malt, which is mashed with plenty of time, and the fermentation process at Mosgaard is twice as long as it is at many other distilleries. There is a reason for that. Because precisely the time and calmness ensures that the yeast gets to work and converts the natural sugars from the malt into alcohol without leaving unwanted flavours. It can be tasted in the finished product.

Scotch Malt Whiskey Society
In 2022, Mosgaard had the great honor of being selected to supply whiskey to the Scotch Malt Whiskey Society and its 37,000 members. As the name suggests, it is clearly mostly Scottish distilleries that are involved, but that Mosgaard in Funen is clearly on a par with the best Scotch, it was also found out long ago in the whiskey’s homeland.
