Produced with spring water from the Hsuehshan Mountains (“Snowy Mountains”), Kavalan Sherry is a single malt from the Solist series, a collection of the distillery’s finest raw cask expressions. Aged in oloroso sherry casks and hand-bottled without dilution, caramel coloring, or chill filtration, it is a rich, exotic, and complex whisky, which in 2011 was named the world’s best single malt outside of Scotland at the World Whiskey Awards.
Color The whisky has a delightful dark raisin color.
Taste The whisky has a rich, buttery, full-bodied taste with lovely nuances of dried fruit and spices, along with a hint of coffee that lingers in the aftertaste.
Aroma A pure and complex aroma that reveals layered notes of dried fruit, nuts, spices, as well as a hint of marzipan and vanilla.
Serving The whisky is an excellent aperitif and digestif.
Founded in 2006 in Yilan County, Kavalan Distillery is Taiwan’s first and only distillery. It belongs to the “King Car” company, which operates in various fields such as beverages, food, biotechnology, aquaculture, and more. The distillery “Kavalan” is named after the indigenous Kavalan tribe, which first settled in Yilan County. The main ingredients in the whisky are pure water sourced from the springs of the Central Mountains and the snow-capped mountain range, as well as barley malt from Scotland, as the local humid climate does not allow for its cultivation. Taiwanese whisky matures differently from Scottish whisky due to the warm climate, which allows the whisky to absorb the oak’s aromas much faster. Due to the island’s unique climatic conditions, three years of Taiwanese whisky can be compared to fifteen years of Scottish whisky. In December 2008, the first bottle of “Kavalan” whisky was launched. Different types of new bourbon and sherry casks, as well as used barrels, are used for aging the whisky. The result is a whisky with a complex bouquet of floral and fruity notes.
