Gilde Bacalao Aquavit is an aquavit that has been developed with rockfish in mind as a specific companion. Although the production of the dried, salted fish is greatest in Norway, Iceland and the Faroe Islands, for some reason it is Spain and Portugal that just can’t get enough of the salty stuff. This is clearly seen in the kitchens of the two countries, where Spain, among other things, uses clipfish in the classic dish, Bacalao – namesake of this aquavit.
It has a rich and full flavor with spicy notes as well as a discreet hint of sweetness and a delicate hint of oak from the new casks it has aged in.
