Rivesaltes “Grenat” is made from 100% Grenache Noir from the property’s biodynamically cultivated vineyards. The subsoil consists of clayey and calcareous layers, mixed with crumbling shale and classic round deposit stones. The climate is warm, but with good cooling from the sea – all perfect conditions for growing e.g. Grenache Noir.

The grapes are de-stemmed and crushed immediately after arrival in the cellar, and fermentation begins spontaneously with the grapes’ own yeast. Addition of the brandy takes place in the middle of the process, and the wine then remains with the lees for another week before the pressing takes place. The wine is matured for approx. 12 months, alternately in steel tanks and in “foudres” (large wooden casks of 20-30 hl.), where it is affected by the air (oxidative maturation). Bottling takes place after natural sedimentation and without filtration. The wine is then stored cool for min. 3 months.

Rivesaltes “Grenat” has a nice, purplish red colour. In the scent, you find immediate notes of cherry brandy, wild forest berries and mild spices. The taste has a good balance between the fruity sweetness and the structure and a quite pleasant fresh and velvety finish. It has a good tannin and finesse at the end, which lifts it up and makes it crisp. Try it with duck with cherry or orange, mature sheep’s cheese, pies with red fruits (raspberries, cherries, plums) or desserts with chocolate. Should be served chilled but not ice cold.
