De Trafford Cabernet Sauvignon is a high-quality wine that boasts a rich and complex flavor. Crafted with passion and precision by De Trafford Winery, this wine is made from handpicked grapes grown in the vineyards of the Stellenbosch region of South Africa. The wine has a deep ruby red color with a bouquet of blackcurrant, tobacco and a hint of dark chocolate. On the palate it is full-bodied with a firm tannin structure and notes of black cherry, cedar and vanilla. The finish is long and smooth, making it an excellent choice to pair with red meat, aged cheese and hearty pasta dishes. This Cabernet Sauvignon wine is made for aging and will improve in the bottle with age.
Tasting notes
Deep, youthful red color. Bright red berries and dusty spice nose typical of the higher Helderberg slopes and some fynbos/herbish character. Intense, but fine and complex. Elegant, full-bodied taste with a velvet structure with lots of red berries, fruit cake and salty notes. Long dry finish. Delicious with most red meat dishes. Grilled butterfly legs with wild rosemary a personal favourite. Drink 2022 to 2035.
The De Trafford family winery was established in 1992. Wine architect David Trafford and his wife, Rita, founded this small wine company with the aim of specializing in producing the highest quality red wines. This winery is located in the scenic Upper Blaauwklippen Road, against the backdrop of the beautiful Stellenbosch Mountains in South Africa.
The signature wine made here is the red wine. The reason it is authentic and flavorful is because of the time, care and effort the founders invest in growing, ripening and harvesting the grapes. Only the best grapes are handpicked and sent to the winery for further processing. Chemical-free native yeasts are introduced in the pre- and post-fermentation process to make the wines extremely flavorful. They are then aged in French oak barrels, where they undergo malolactic fermentation, which gives the wines a smooth and thick texture. These wines are stored in underground cellars for about 18 to 22 months.
In addition to red wines, De Trafford also makes white wine from Chenin Blanc grapes of the highest quality. Native yeasts are used to ferment these wines and they are here subjected to a traditional basket press method. The wine matures for up to 6 months in oak barrels before being sent for bottling.
De Trafford Winery also makes exclusive straw wine – the first of its kind in the entire country of South Africa. Here, Chenin Blanc grapes are laid out to dry on straws or racks. During this process, the fruit flavors and natural sugars become more concentrated. So the resulting wine contains a rich tart texture and intense sweet flavor, making it a perfect dessert wine.
As well as having their own vineyards, De Trafford also collaborates with the local farmers to use their vineyards to grow very high quality grapes such as Cabernet Sauvignon.
