In the mouth, it is bold – plenty of fruity sweetness, but also acidity and, of course, smooth tannins – a big wine that is absolutely well-made.

Opens with an intense and inviting aroma of dark berries, including black cherries and plums. There are also spicy notes of black pepper and a hint of smoke and oak, adding depth to the scent. Rich and complex fragrance. The taste is full-bodied and powerful with rich berry notes of black currants and plums, complemented by spicy elements like black pepper and a touch of cinnamon. The wine has soft tannins that provide good structure and balance. The aftertaste is long, with a fresh acidity that lifts the heavy fruit and gives the wine some freshness. An intense wine that stands out with good complexity and structure. A wine that lives up to its name with its distinctive profile, great power, and excellent balance. It will pair perfectly with hearty dishes such as grilled meat, braised dishes, or aged cheese.
Once the grapes are pressed, the temperature is lowered so that the must can rest for 24 hours before fermentation begins. Fermentation takes place over 7-10 days, with the must being pumped daily to ensure optimal extraction of color, scent, and taste aromas. Once fermentation is complete, the wine is placed in French oak barrels (10% new and 90% old). The best barrels are selected, blended, and then aged for an additional 6 months before being bottled and released for sale.
About De Lisio Wines
It was Tony de Lisio’s dream to create his own wine that led him to quit his job at a winery in McLaren Vale in the early 2000s. Tony had spent the last 25 years working with wine, first in the vineyard as a viticulturist and later in the winery as an oenologist. This work has given him a wealth of experience and opinions, which he now bottles in his own expression. The philosophy at the winery is simple, as the focus is on producing the best grapes possible, then manipulating them as little as possible in the winery. The result is dense and rich wines that align with the area’s terroir. Tony’s hallmark lies in purity, as the wines, despite their fullness, still maintain very pure and balanced fruit. The grapes for Quarterback come from the same area as Krystina Shiraz. The area, located 3 km north of the village of McLaren Vale, consists of a total of 81 hectares of vineyards, with most of these vineyards supplying the grapes for Quarterback. While wines from the McLaren Vale area are often heavy and robust, De Lisio’s wines are elegant, complex, and mineral. The top wines are reliable point scorers, but even De Lisio’s regular wine, Quarterback, is an exceptional experience!
