All in all, the area is absolutely perfect for the Sauternes, where the fantastic noble rot, or botrytis cinerea, plays an absolutely decisive role. Here, an almost mythical fog lies quietly over the vineyards in the morning and helps ensure the humidity needed to allow the grapes to be “attacked” by noble rot. On the other hand, it must be dry at exactly the right time, so that the grapes can dry out using the fine noble rot, but retain the sugar in the grapes. And that is also the case at Château d’Yquem, where you are doubly favored by nature. When the grapes are to be harvested, you go through the grapes in the fields as many as five times to ensure that they have reached just the right level of noble rot. where the grapes on it almost look like something between a raisin and a date – and in principle do not look very appetizing.
