The wine is a beautiful ruby red in the glass with a bright glow. The aroma is intense and fruity with notes of dark cherries and fine hints of spices. In the mouth, the wine is experienced as dry with a nice structure, here the notes from the fragrance return and are complemented by a multitude of red berries and a nice spicy expression. The aftertaste is long and persistent and testifies to a wine in perfect balance.
This is a versatile wine that can be drunk with a wide variety of meats, a spicy stew or mature cheeses.
Serving temperature: 16-18°C.
Manufacturing
Antica Corte Ripasso is made from Corvina and Rondinella grapes, as well as smaller amounts of other local grapes. The grapes are harvested at optimal maturity and are then brought to the winery, where the wine is fermented at controlled temperatures of 25°C for 12 days together with the grape must. The wine then goes through the classic second fermentation on the remains from the production of the world-famous Amarone wines – hence the name Ripasso. After the second fermentation, the wine is stored in Slovenian oak barrels, after which it is bottled, where it rests before release to the market.
