AALTO PS (Pagos Seleccionados) is the prestige cuvée from Bodegas Aalto in Ribera del Duero, Spain—made only from a strict selection of the estate’s finest parcels and oldest, lowest-yielding vines. It’s a wine built for depth and longevity, combining powerful Ribera concentration with a polished, modern finish.
Origin & grape
Grape: 100% Tinto Fino (Tempranillo)
Vineyards: very old vines from selected plots, with Aalto often highlighting areas such as La Horra and La Aguilera within Ribera del Duero.
Winemaking & ageing
AALTO PS is defined by its “no-compromise” approach: meticulous selection of fruit and extended maturation in new French oak barrels (the exact ageing can vary by vintage; Aalto cites around 21 months for recent releases).
Tasting profile
Expect a deep, intense style with layered aromatics:
Nose: ripe blackberries and dark cherries, plum, liquorice, warm spices, tobacco/cedar notes and toasted oak.
Palate: full-bodied, dense and structured, yet remarkably smooth—silky tannins, good freshness and a long, lingering finish where dark fruit, spice and oak nuances unfold gradually.
Food pairing & serving
Pairing: grilled or roasted red meats, lamb, game, slow-cooked stews, mushroom dishes, and aged hard cheeses.
Serving: 16–18°C.
Decanting: recommended (especially for young vintages), typically 1–2 hours.
Cellaring
AALTO PS can be enjoyed young with decanting, but it’s particularly rewarding with time in the cellar, gaining complexity and integration over many years.
