Isle of Fionia STILHED is an organic Danish single malt whisky from Nyborg Destilleri, distilled and matured on Funen. It is made from organic barley and island groundwater, and bottled in 700 ml at 46% ABV. The maturation is built in two stages. The whisky is first matured in selected ex-bourbon casks, giving it a soft base with notes of vanilla and gentle oak. The result is a full, rounded, and fruity whisky in which sweetness, nuttiness, oak, and spice are held together in a very harmonious style. It is also described as non-chill filtered and with natural colour.
In the glass, STILHED comes across as a softer and more rounded whisky than many sharper young malts. You can expect notes of vanilla, gentle oak, raisins, dried fruit, nuts, and warm spices, with an elegant sherry character rather than heavy cask dominance.
