Exclusively from our mountain slopes in Castelcerino, in the heart of the historic Soave Classico zone, located between 650-1470 feet above sea level.

Production technology
The grapes are harvested entirely by hand from the end of September to October in several passages through the vineyard. We select only the most mature, healthiest and loosest clusters and harvest them carefully and place them in small wooden boxes to avoid breakage. They are then brought to a special room called “fruttaio”. Here the piles are hung to dry in special nets, where they remain until the end of the following March. During this process, called appassimento, the grapes are inspected daily and any imperfect grapes are removed. Appassimento gradually shrinks the grapes and concentrates the sugars and avoures. After drying, the grapes are pressed very gently and extract only the very best part of the juice. The resulting must is placed in small oak barrels, some new and others used where it ferments and matures for 10/12 months. The wine spends another two months in the bottle before leaving our cellars.

Colour
Intense, golden yellow.

Bouquet
The wine shows a wide, rich selection of aromas, from persimmon, dried g, apricot, papaya and candied citrus to caramel, freshly ground coffee and clear notes of dried Garganega skin.

Taste notes
On the palate, it is sweet, well-balanced with a lively acid content and has a very long niche.
