The whisky began its maturation in carefully selected ex-bourbon casks, providing a base of vanilla, honey, and gentle spices. It was then transferred into hogsheads that had previously held Ruby Port from Portugal’s famous Douro Valley. This additional maturation brought intense layers of red fruit, sweetness, and a striking ruby-like hue to the whisky’s colour and flavour profile. The result is an expressive and elegant whisky bottled at 48% ABV, entirely non-chill filtered and naturally coloured – exactly as GlenAllachie intends to present its spirit.
On the nose, it opens with notes of orange zest, apricot, and candied red berries, followed by a warm spiciness with hints of ginger, honey, and a touch of dark chocolate. The palate is full-bodied and rich with flavours of red fruits such as raspberries and blackberries, balanced by caramel, chocolate, and gentle oak. The finish is long and harmonious with lingering notes of dried fruit, honey, and subtle spices.
