Farina Amarone della Valpolicella is a classic Amarone that delivers the hallmark combination of dark, concentrated fruit, warming spice, and a smooth, velvety mouthfeel—built through the traditional appassimentomethod.
Style & winemaking
Amarone is made from traditional Valpolicella grapes (typically Corvina and related varieties, often with Rondinella and sometimes other local grapes). After harvest, the grapes are dried under controlled conditions for weeks to months. As water evaporates, flavours concentrate—creating more depth, fuller body, and that signature Amarone profile where the fruit feels extra ripe and subtly “dried” in character. After fermentation, the wine is aged further to soften the tannins and integrate fruit, oak spice and structure into a cohesive whole.
Aroma & flavour
In the glass, Farina Amarone is often a deep ruby with a dense core. The nose is typically generous and layered, showing dried cherries, plums and raisins, followed by cocoa/dark chocolate, vanilla, cinnamon/clove, and sometimes a subtle hint of tobacco, leather or toasted nuts. The palate is full-bodied and rounded, with clear fruit concentration, soft yet present tannins, and a long finish where spice and a lightly “toasted” nuance linger. Despite its power, there’s usually enough freshness to keep the wine balanced rather than heavy.
Serving
Serve at 16–18°C. Amarone like this almost always benefits from decanting for 30–60 minutes, which opens the aromas and makes the palate feel more seamless. A large glass also helps it show at its best.
Food pairing
Farina Amarone is a natural “dinner power wine” and shines with dishes that can match its intensity:
slow-cooked beef, veal or game
steak or beef tenderloin, ideally with a red wine sauce
dishes featuring mushrooms, truffle or roasted savoury notes
aged hard cheeses (Parmesan-style)
or simply as a luxurious after-dinner sipper
