About Kilchoman Distillery Kilchoman is Scotland’s only farm distillery, located on Rockside Farm in the northwest of Islay. The distillery grows its own grain near Machir Bay and is the only distillery on the island to both grow and malt Islay barley for its whiskies. Founded in 2005, Kilchoman sold its first whisky in 2009. It’s classic Islay with distinct, elegant notes of peat smoke, for which Islay is so beloved. Kilchoman’s uniqueness lies in the slight hint of citrus in its whiskies, adding a touch of freshness to the dram. Twenty percent of the malt is from its own barley, and they exclusively produce Single Malts—meaning no whisky for blends. These are whiskies that can and should be enjoyed young, with a fresh and lively character, and a salty touch from the centuries of saltwater washing over the peat.
The whisky ferments for a minimum of four days or 50 hours. After that, most distilleries would stop the fermentation, but Kilchoman allows it to go on longer, creating secondary fermentation and more esters. They use small stills and double distill.
Exclusive and Popular Whiskies For its two most popular whiskies, Machir Bay and Sanaig, the distillery uses a combination of bourbon and sherry casks. While most of the casks for Machir Bay are bourbon casks, most for Sanaig are sherry casks. Both whiskies are 46% ABV and contain no caramel coloring or chill filtration.
