A special limited edition bottle of Highland Park 25 Year Old, made from less than 20 casks, including sherry-seasoned European oak casks, combined with Bourbon casks and refill casks, all hand-selected by master whiskey maker Gordon Motion.

Nose: Warm vanilla, heather honey and citrus peel, then sweet barley, dried herbs and papaya.

Palate: Soft dried fruits, buttery fudge and gingerbread with a very light touch of BBQ charcoal for support.

Finish: Moody peat smoke and a hint of sea spray.

Highland Park’s unique character is due to the peat used as fuel when drying the grain. This very peat has for centuries absorbed salty waves and gives a heather-like touch to the whisky. For this Highland Park Single Malt 25 year whiskey, only a very limited amount of casks have been used, which have been handpicked by the master blender. He has followed the development of the casks since they were stored in 1994 and carefully composed them according to sweetness and smoke. The whiskey has aged in a mixture of first fill and refill bourbon casks as well as European sherry casks and after a maturation of over 25 years it has achieved an unusually soft character. This 25 year Highland Park is a “Spring 2019 Release” with a light smoky aroma with nuances of honey, chocolate, heather and ripe fruits such as melon and apricots. The taste is nutty with hints of honey and Oloroso Sherry. The aftertaste is medium dry with heather peat smoke and a delicious salty finish.
