G.D. Vajra N.S. Della Neve is the Vajra family’s seriously ambitious—and pleasantly unexpected—sparkling wine from Piedmont: a Metodo Classico rosé (traditional-method, bottle-fermented) that translates their house signature of altitude, freshness, and precision into bubbles. G.D. Vajra is best known for Nebbiolo and Barolo from the hamlet of Vergne, but this cuvée fits their mindset perfectly: curious, meticulously made, and still rooted in place.
The name Nostra Signora della Neve means “Our Lady of the Snow,” tied to a small chapel setting near the vineyards. The wine is made as a rosé de saignée, meaning the juice is drawn off after a very short maceration to achieve a delicate pink hue and a taut, wine-driven core. The base blends an unusual yet highly purposeful pairing here: Nebbiolo for structure, drive, and backbone, alongside Pinot Noir for elegance and classic sparkling finesse. After the second fermentation in bottle, it is aged extensively on the lees—typically around 48–60 months—building depth, a creamier texture, and more layered aromatics.
In the glass, it’s usually bone-dry (Extra Brut) and distinctly food-oriented rather than simply “fruity rosé fizz.” Expect red berries and citrus peel, rose-petal lift, a subtle savory-spicy edge, and a firm mineral line, carried by a fine, persistent mousse. The Nebbiolo element makes it feel more structured and vinous than many rosé sparklers, which is exactly why it excels at the table.
Serving and pairing
Serve well chilled but not icy, around 8–10 °C.
A standout food sparkling wine: great with charcuterie, fried bites, tuna or lightly prepared veal, mushrooms, and dishes built on salt and umami.
Also works beautifully as an aperitif that can carry through the first courses.
