Arbois Blanc Savagnin Ouillé
A distinctive and vibrant white wine from Jura with notes of lemon, pear, stone fruit, white flowers, and a discreet tropical lift, often with a light nutty depth. It pairs beautifully with oysters, scallops, smoked salmon, chicken with lemon, and aged Comté, where its freshness and texture really come into their own. The wine is made from 100% Savagnin, aged for nine months in oak, and produced in the classic ouillé style, where the barrels are regularly topped up to prevent the oxidative development that is otherwise typical of Jura.

Bat Gara Urtaran Cuvée Hondarrabi Zuri/Riesling
An intense and distinctive white wine with aromas of white stone fruit, citrus, white flowers, and honeyed nuances. On the palate it is both rounded, textured, and fresh, making it an excellent match for grilled fish, seafood, fish in light sauces, and other dishes where you want both body and precision in the glass. The wine comes from the estate’s own parcels in Lezama in Arabako Txakolina, is harvested entirely by hand, gently pressed, spontaneously fermented with native yeasts in chestnut and Hungarian oak barrels, and then aged on the lees for eight months.

Op Sy Moer
A lively and unusual white wine with citrus, peach, green apples, ginger, and exotic hints, wrapped in a dry, fresh, and lightly creamy style that evolves beautifully in the glass. It is ideal for vegetable dishes, fish, and seafood, especially when you want to serve something with a little more character than the most obvious choices. The name means “sur lie,” and that is exactly the point: the wine is kept on its lees to gain more texture and less oxidation. It is made from Palomino, Grenache Blanc, and Chenin Blanc from old bush vines in Piekenierskloof, where sandstone soils and the cool mountain environment help shape its distinctive expression.

Bellmunt Priorat Blanc
A Mediterranean-influenced yet precise white wine with notes of white flowers, citrus, stone fruit, herbs, and a fine saline minerality. The palate is lively and clean, with lasting freshness that makes it especially well suited to grilled fish, seafood risotto, grilled vegetables, and fresh goat cheese. The wine comes from Bellmunt del Priorat, from younger parcels in Vall de Bellmunt on the region’s characteristic llicorella slate, and the estate works organically and biodynamically with a focus on a pure, terroir-driven expression.

Château Feuillet Petite Arvine
An aromatic alpine white wine with grapefruit, passion fruit, white melon, wild flowers, and bright, fresh acidity. It works beautifully as an aperitif, but also with starters, fish, firm cheeses, and white meats, where its energy and purity can really shine. The grapes come from two small parcels at 700–800 meters altitude in Valle d’Aosta, are harvested late in October, given two days of skin contact, cool-fermented in stainless steel without malolactic fermentation, and then matured for a few months in steel before bottling in the spring.

Fattoria Coroncino Verdicchio Gaiospino
A deep and characterful Verdicchio with yellow fruit, plum, lemon, herbs, and clear minerality, where the body is firm and the palate is spicy, saline, and long. It is a wine that pairs very well with fish, seafood, fried vegetables, risotto, and fresh cheeses, especially when you want a white wine with more structure and seriousness. Gaiospino is made in Staffolo in Marche from grapes grown in the estate’s vineyards according to organic and biodynamic principles, and the wine is vinified and aged in stainless steel for 10 months to preserve both energy and terroir.
