Soave is Veneto’s best-known white wine, which comes from the demarcated area just east of Verona and Valpolicella in the shelter of the Lessini mountains. In the area’s rolling hills of volcanic origin, the garganega grape thrives (press the second syllable). Under this historic DOC, only white wine is produced, with the local but gigantic cooperative, Cantina di Soave, accounting for almost half of the DOC’s production. The Classico zone is clearly the best part of Soave, with a favorable location in the hilly part of the DOC.
Soave has always had a reputation as a thirst quencher, and of course not all wines can be superstars, but that said, Domìni Veneti Cedri Soave Classico belongs to the better end of the hierarchy and offers a good drinking experience. 2021 is a terrific vintage with good resilience in a healthy, clean wine.
Domìni Veneti is Cantina di Negrar’s prestige range, vinified under the expert guidance of chief oenologist, Daniele Accordini. During vinification, the grapes are briefly macerated, pressed in a pneumatic press and both fermented and stored in steel tanks, so that the grape-identical aromas are as clear as possible in the aroma picture.
This is a dry white wine with a light body and aromas of green apples, lemon and fresh almonds. It glides down surprisingly easily, and a moderate harvest yield here has ensured a wine that is without the bitterness that appears in soave, when during vinification you step on the gas pedal a little too hard to force all the aromas out of the grapes.
This is distinctly summer wine; perfect as the cooling wine in the shade, for lighter starters and not least spaghetti alle vongole, pasta with venus clams.
We recommend a serving temperature of approx. 8-11°.
