Dictador Jerarquia Rum Fino 1991, 41% is a 29-year-old cask-aged rum, distilled in 1991. Jerarquia means hierarchy in Spanish, and refers to a collection of completely unique casks owned by the Parra family, from the top shelf – or top of the hierarchy. Every single dish in the collection has been given its own completely unique taste, and this is the first time they have been released at Dictador. All the rooms in the Jerarquia series are distilled and produced in the heart of Columbia, at a now closed distillery, which is why no more can be made. Each cask reflects the patience and finesse that time brings when making rum. A phenomenal piece of work.
This rum is aged in American oak and has a sherry cask finish. On the nose there are notes of raspberry, blackberry, a bit of stone fruit and ginger. In addition, the rum offers nuances of crushed, black pepper, leather and cedar wood. In the mouth there is lots of fruit, mainly plums, figs, but also black tea, a little red apple and a hint of bitter orange peel and walnut. The nuts continue into gingerbread tones and end in a seductively long finish, with both guava notes and cocoa. A truly exceptional glass of rum.
