Tasted with cheese, this wine really highlighted the flavours of the cheese. The colour is deep ruby red and matches the wine beautifully. The finish is delightful – pleasant and complete.
Diamond Hill Cabernet Sauvignon Merlot appears a brilliant red in the glass. The nose offers notes of blackcurrant and other ripe forest berries. The palate is beautifully balanced, with plenty of fruit and a slight dryness. The finish is delightfully long and filled with fruit.
Serving temperature: 14–16 °C
The grapes ripen under clear sunshine and by the time they are harvested in February, they are fully ripe. After picking in the early morning, the still-cool bunches are brought in for destemming and pressing. Fermentation takes place at a low, controlled temperature in order to preserve the fruit richness of the grapes in the final wine.
Transporting wine in bulk from the country of origin for bottling in Denmark results in a significantly lower CO₂ impact compared with importing wine already bottled. In recognition of this reduced carbon footprint – as well as the quality assurance and economic advantages – bulk wine now represents an ever-increasing part of our business.
Since the turn of the millennium, Diamond Hill has been a reliable name for quality wine. The people behind Diamond Hill wanted to show that Australia can offer much more than just Shiraz – in fact, the vast continent can boast more than 70 different grape varieties. Diamond Hill chose to focus on South Eastern Australia and to concentrate on five different wines from carefully selected vineyards in the area.
With its two red wines, two white wines and one rosé, Diamond Hill showcases the essence and diversity of wines from South Eastern Australia. Each of their wines is like a small precious stone, symbolised by the distinctive diamond-shaped logo. Over the years, Diamond Hill has received numerous accolades for its wines.
