They allied themselves with the company Amphoris, which has 1 ha at its disposal. of the bottom of the Atlantic Ocean, off the island of Ouessant, west of the coast of Brittany. For the 2017 vintage, Leclerc-Briant chose to blend 1/3 Chardonnay grapes from Bisseuil, 1/3 Pinot Noir from Avenay-Val-dOr and 1/3 Pinot Meunier from Vrigny – all three varieties grown on soils with a high content of chalk , corresponding to the seabed at Ouessant Island (Ushant in English). The wine was bottled in July 2018 and disgorged in early August 2021. At the end of August of the same year, the bottles were lowered to the seabed at a depth of 60 meters, where the pressure is the same as in a bottle of champagne (6 bar). Abyss was raised on land at the beginning of July 2022, after the bottles had been in contact for 10 months with the energy from the seabed, the water movements in the depth, shellfish, microorganisms etc.

The wine has many small, fine and persistent bubbles, which immediately give warning of a very intense and crisp wine. In the scent, Abyss is incredibly concentrated and complex, with lots of delicious details. The same style continues in the taste with plenty of freshness and creamy, fruity and slightly exotic nuances, which give this unusual champagne a fantastic harmony. It finishes with fine notes of citrus, white peaches and wild roses as well as a minerality and a slightly salty touch which is classic for Leclerc-Briant and which comes through nicely here. A unique experience! Perfect for festive occasions or for food, especially with shellfish (e.g. scallops or oysters) or fish (preferably grilled).
