The French expression “Blanc de Noirs” means something like “white of blacks”. It is a reference to the grapes used in Champagne. This type of champagne is light (blanc), but is typically made from the blue grape Pinot Noir. When the champagne is still light, it is because the grape skins are quickly removed during vinification. It is the grape skins that contain dyes. The content of the grapes is white. So you get a light champagne from dark grapes: Blanc de Noirs.
Characteristic, fresh, round and fruity champagne. An expressive aroma of baked, exotic fruits is joined by notes of grapefruit and orange on the tongue. Complex with a perfect balance between sugar and acid.
Aged 24-36 months in the cellar. Dosage (sugar): 10g/L.

This NV Champagne Blanc de Noir Brut from Champagne producer Michel Dervin is a blend of 60% Pinot Meunier and 40% Pinot Noir, i.e. red grapes. The champagne opens with fresh notes of citrus, green apples, orange peel and some almonds, as well as a small hint of toast. In the taste you will find a nice light fruity sweetness, citrus, ripe green apples and a note of apricot. The acidity is medium high and cleans the mouth effectively, and the bubbles are small, elegant and persistent. It is a lovely dry Champagne with a good fresh acidity, a balanced fruity sweetness, where it is never too dry, and an elegant mousse. A light, fresh and fruit-driven Champagne that will be an obvious companion to almost everything and will suit most people’s tastes as it does not appear sour.

Champagne created from a blend of Meunier and Pinot Noir grapes. Beautifully golden in the glass with elegant bubbles and a certain heaviness in the aroma: Cranberry, brioche and chalk. The taste has notes of sweet, yellow apples, a hint of apricot and slightly bitter red berries, leading to a tart finish. There is nice depth in the wine, even if it is a bit dose-heavy. A well-made all-round champagne.

Michel Dervin hails from Champagne and dreamed from an early age of becoming a wine farmer to produce his own cuvées. In 1983, the dream came true when he created Champagne Michel Dervin. He began with a small plot of vines, which he developed over the years to become a vineyard with an area of 7.80 hectares in the village of Cuchery located on the edge of a small tributary of the Marne with a breathtaking view of the hills. The cuvées are the fruit of the terroir, located in the heart of the Marne valley, where the main grape variety is Meunier. The house’s Blanc de Noirs, Rosé and Millésime find their special character in a blend consisting exclusively of black grapes with white juice, Pinot Noir and Meunier.

The grapes are harvested by hand and pressed slowly. Fermentation and stabilization of the wine takes place in stainless steel vats with temperature regulation to ensure the finesse and aromatic complexity of the finished champagne. Malolactic fermentation is not carried out in order to best preserve the natural acidity of the grapes. The cellar has a constant temperature, which is protected from light. The champagnes age longer than the regulations prescribe (approx. 36 months).
