Jeanne Delaunay has carefully selected two very different terroirs in Languedoc from which the grapes for this wine originate (60% Grenache Noir and 40% Syrah). At the foot of the Montagne Noire mountains, on terraced vineyards with clay-limestone soils, grapes are grown that bring minerality and elegance to the wine. In the Aude region, on gentle slopes and on what Jeanne describes as “poor and unproductive soils”, grapes are cultivated that contribute depth and aromatic intensity.
The grapes are harvested early in the morning to preserve freshness and aromas. They are then gently pressed, and only the finest juice is used. This is kept cool for 24 hours before fermentation takes place in temperature-controlled stainless steel tanks at 16°C. Before bottling, the wine rests “sur lie” (on its lees) in tank for five months, adding further structure and intensity.
The wine has a beautiful, bright pale pink colour. The nose offers generous and intense notes of peach and strawberry, lifted by fresh hints of citrus and nuances of white pepper and flint. Strawberry returns on the palate in an elegant and airy expression, joined by pomegranate and redcurrant, before the wine finishes with fine length and a discreet minerality. Best enjoyed at around 8°C. Perfect as an aperitif or with salads, salmon tartare with fresh herbs, or grilled fish.
