J.M. Goulard Champagne Origine Blanc de Noirs Extra Brut

How it is produced:
This is a blanc de noirs from the Massif de Saint-Thierry near Reims, made from pinot meunier and pinot noir. According to several sources, around 50 percent is vinified in oak barrels, adding extra depth and texture, before the wine spends around 24 months on the lees. The dosage is 4 g/l, placing the wine clearly in the extra brut category and giving it a drier, tighter profile.

How it tastes:
The palate is fresh, precise and lightly vinous, with notes of raspberry, red apple, citrus, white flowers and candied orange. Beneath the fruit is a fine creaminess and a little extra depth that makes the wine feel more serious than many simpler aperitif Champagnes. The mousse is well integrated and the finish is long, dry and elegant.

What it pairs with:
It is especially well suited to elegant fish dishes, shellfish, mild goat’s cheese and other dishes where you want freshness but also a little more structure in the glass. It is also a very good choice for those seeking a more artisanal and clearly dry Champagne in the package.

Champagne Théophile Brut

How it is produced:
Théophile Brut is closely linked to Louis Roederer and is made from young vines from the house’s own vineyards together with purchased meunier from classic sites in the Marne Valley and western Montagne de Reims. The blend is based on four vintages, with roughly equal parts chardonnay, pinot noir and meunier. Around 50 percent malolactic fermentation is used, the wine is aged for two years in bottle and then rests for at least six months after disgorgement. The dosage is 9.5 g/l.

How it tastes:
This is the most immediately accessible Champagne in the package, with a style that feels fresh, soft and generous. The nose and palate move through white flowers, hawthorn, citrus, light orchard fruit and a discreet creaminess from ageing. The overall impression is lively and balanced, with fine mousse and a charming, fruit-driven openness.

What it pairs with:
Théophile works very well as an aperitif, but also with lighter fish dishes, shellfish and simple starters. It is the bottle in the package that feels most natural when you want a classic, fresh Champagne with broad appeal and a reliable style.

Palmer & Co. La Réserve

How it is produced:
La Réserve is Palmer & Co.’s signature cuvée and is built around a high proportion of chardonnay, supported by pinot noir and meunier, together with a significant share of reserve wines. Several current sources indicate around 41 percent reserve wine in the present bottling, while the house style overall tends to be just over half chardonnay with the remainder mainly pinot noir and a smaller share of meunier. Part of the reserve wines comes from Palmer’s special solera system, and the wine is aged for at least four years on the lees in the house’s chalk cellars. The dosage is around 6 g/l.

How it tastes:
La Réserve is creamy, elegant and more layered in expression, while remaining clearly fresh. The palate moves through yellow apple, citrus, biscuit, brioche, nuts and a discreet exotic fruitiness with hints of peach, pineapple and mango in some current bottlings. It is a wine with fine mousse, good length and a beautifully judged balance between maturity and tension.

What it pairs with:
It works very well as an aperitif, but even better with elegant fish and shellfish dishes, where the wine’s combination of freshness, creaminess and length really comes into its own. It is also the bottle in the package that most clearly delivers a sense of premium while still remaining reasonably priced.
