Kilchoman 100% Islay Sherry Cask Matured – 11 Years is a special release within the distillery’s flagship range, produced entirely from Islay-grown barley and matured exclusively in the finest oloroso sherry casks for 11 years. The result is a whisky that beautifully marries Kilchoman’s gentle peat smoke (around 20 ppm) with the rich sweetness of sherry wood.
On the nose, it opens with aromas of dried fruit, dark chocolate, roasted nuts, and soft smoke, underpinned by notes of citrus and malt. The palate is velvety and full-bodied, offering layers of caramel, raisins, vanilla, sea salt, and spiced oak. The finish is long, rounded, and perfectly balanced between sweetness and smoke.
