Nobile de Montepulciano is made exclusively from the Sangiovese grape (Prugnolo Gentile) from the vineyard “Salcheto” (15.37 ha.), grown according to organic and biodynamic principles. The yield is extremely limited – each vine gives approx. a bottle of wine. After a fermentation in wooden casks, 70% of the wine is matured in large “botti” and 30% in small casks for 18 months, and a further 6 months after bottling.
Salchetos Nobile is known as a super charming wine! Juicy. Both in the aroma and in the taste, there are crisp shades of cherry (and perhaps especially cherry stone, which brings a bit of bitterness) and dark berries that come to the fore. In the taste, the wine reveals smoky notes (from the barrels) and mild spices. It ends with great concentration and fullness – but with the winery’s usual delicate and harmonious style. A very complex wine. Served with barbecue, game, beef and lamb. Serving temperature: 18-20°C. Can be “forgotten” a bit in the cellar for 8-10 years.
Salcheto belongs with its 74 ha. vineyards to among the smaller wineries in Montepulciano, but is nonetheless one of the wine houses that has really made a mark in recent years. The winery was founded in 1991, and from the outset a very ambitious goal was set: replanting Sangiovese cuttings of own production (“Sélection massale”), low yield and organic cultivation.
Today, the vineyards are mainly planted with the local grapes Prugnolo Gentile (Sangiovese) and Canaiolo, which are grown according to controlled organic and biodynamic principles. From the 2011 vintage, Michele Manelli (owner and cellar master) and his team have started using the state-of-the-art “off-grid” cellar, which uses 54% less energy. The dream of the winery being CO2 neutral is being realized, and Salcheto is in every way a leading company in relation to developing more sustainable production principles. They are therefore not without reason proud of the results they have achieved and state, among other things, in this connection: “We are proud to be the first company in the world to have certified the carbon footprint of a bottle of wine (according to ISO 14064 standard, in 2011)”
In addition to the focus on more sustainable production, Salcheto has for more than a decade worked hard to be at heart “a good citizen” in the global community. Through the Italian registration; “società benefit”, the company has made this objective part of the company’s articles of association, and the company’s management is thus legally obliged to the objective of social benefit and to report on the progress achieved. Salcheto is thus today a non-profit company and from 29 July 2021 has been able to call itself “SALCHETO srl Società Agricola Società Benefit” (SALCHETO S.r.l. Soc. Agr. S.B). Salcheto does not only have to be proud of their results in relation to a more sustainable production – they can definitely be proud of their wines as well. Because they are excellent!
